Allergies and dietary requirements
Read below what we can and cannot take into account.
VEGAN
Noor does not offer a vegan menu. Noor’s kitchen tells a very personal story, in which we, Jeroen Marleen, create dishes steeped in our experience, love, taste, feeling and seasonal influences. While we have a deep appreciation for various culinary traditions, our personal preference is not vegan cuisine. For this reason, we do not offer vegan dishes.
The following are incorporated into most sauces and preparations and cannot be omitted.
- Mushrooms
- Rosemary / thyme / bay leaf / juniper berry / pepper
- Spices in general, contact us if you are allergic to a specific spice.
- Garlic, onion, carrot, celery, leek
- Butter / cream / lactose
- Alcohol (boiled out)
Pregnant
Noor can take into account a pregnant woman’s general dietary needs, such as avoiding:
- Raw or semi-raw meat (e.g. carpaccio, filet americain)
- Raw fish or shellfish (e.g., raw fish, oysters)
- Unpasteurized dairy products (e.g. raw milk cheeses)
- Fish species with high mercury content (e.g. swordfish, fresh tuna)
- Raw or half-cooked egg (e.g., in homemade mayonnaise)
- Liver storage or liver
- Alcohol (boiled out/vaporized)
Every woman is unique and handles pregnancy differently, so please let us know your specific preferences regarding food. If you are on a strict diet, we recommend visiting Noor after your pregnancy.
Gluten allergy / completely gluten-free / gluten intolerance / celiac disease
In Noor’s small kitchen, we regularly work with gluten-containing ingredients. Because gluten is incorporated into many of our preparations, we cannot offer a menu that is completely gluten-free or suitable for people with gluten allergies. There is always a risk of airborne cross-contamination, which can cause health issues. Also, our kitchen is not equipped to completely separate a menu without potentially coming into contact with gluten. If you have a mild gluten intolerance or can tolerate small amounts of gluten, we can often modify our menu to suit your needs. However, we recommend that you always contact us in advance before making a reservation so we can discuss your specific needs.
Lactose free / (cow) milk allergy
Cream, butter, milk, crème fraîche, and so on, are frequently used in Noor’s cooking, and therefore we cannot offer a completely lactose-free / cow’s milk protein-free menu, as this would significantly affect the essence and taste of our dishes, which we cannot support. If small quantities are not a problem, we kindly advise you to contact us prior to making a reservation to discuss options.
Pig
At Noor, pork is not served as the main ingredient. However, we do use pork products as flavorings in our dishes, such as bacon baked into sauces or a bacon vinaigrette, and pork gelatin. We also deep fry in lard and sometimes serve a thin slice of “attic bacon” over a dish. If you cannot consume pork products due to allergies or religious reasons, we can accommodate this by minimizing the use of pork products in our dishes as much as possible. We can deep fry in neutral oil, omit pork from preparations and possibly offer a selection of cheeses in lieu of dessert. However, because of our small kitchen and limited staff, we cannot guarantee that there will be no cross-contamination. If it is a personal preference and not for allergies or religious reasons, it is no problem for us to serve dishes without visible or tasting pork.
Nuts
At Noor, we work with nuts, products containing nuts, or products manufactured in the same factory as nut products. We can accommodate nut allergies and substitute dishes with nuts. However, due to our limited kitchen space and small staff, we cannot guarantee that cross-contamination will not occur. Please indicate clearly in advance which nuts you have an allergy to.
Eggs
Eggs are an integral part of Noor’s cuisine, from amuses to appetizers, main courses, desserts and friandises. Unfortunately, it is not feasible to offer a full menu without eggs.
Citrus fruits / vinegar / acid
Citrus fruits, both their juice and rind, are essential ingredients in Noor’s cuisine, and they are woven into all dishes, from amuses to friandises. Unfortunately, we cannot offer a menu that is citrus-free. Do you have an allergy to a specific citrus fruit? If so, please contact us before making a reservation so we can discuss options. Besides citrus, vinegar (acid) in all forms is an essential ingredient in Noor’s cuisine. We cannot offer a menu that is vinegar/acid free.
